what I typically eat in a day

Right now I’m basically 100% gluten-free and not gonna lie, very proud of myself. It’s a lot of willpower but I’m doing it and it’s easier than it looks. I even pass up the bread at dinner right now and if that doesn’t mean I’m serious idk what does.

I’ve gotten what I eat everyday pretty much down to a T, which is SO boring I know but also necessary so sticking with it for now. I’m also not a chef so I’m a little limited in my cooking skills but I’m tryyyying :)

BREAKFAST

I try my hardest to intermittent fast which means I eat between 11am-7pm or 12pm-8pm but sometimes waiting til 12pm to eat is a little tough when I get up so early. I try my hardest though! However, on the weekends I don’t eat breakfast because i sleep in and am just not hungry until lunch or even late afternoon.

I try to start each morning off with a hot green tea (even if I get an iced green tea at Starbucks i have a hot one too), or hot water and lemon. I will usually try to do the Energy Shot from Suja as well.

if I have a lot of time in the morning I will make a smoothie that consists of whatever I’m feeling. Typically it is almond milk, some sort of combo of frozen fruit: peaches, coconut, blueberries, banana, strawberries, pineapple, spinach, Vital Proteins Collagen, and sometimes cinnamon. If I do this, it’s basically all I eat for breakfast.

2-3 days a week, I will just grab Starbucks and that’s it. I get a venti iced green tea unsweet and the bacon egg bites. These babies are soooo good and packed full of protein. I swear they fill me up for HOURS.

Usually though I have zero time in the morning so when I get to work I will eat coconut milk yogurt with granola and sometimes a banana. Right now I love the Non-Dairy Chobani Vanilla yogurt and Bob’s Red Mill Granola. I love the Coconut Spice and Lemon Blueberry flavors the best, but they are all sooo good.

LUNCH

Lunch varies by the day but either I will grab the bacon egg bites if I don’t get them that morning or some sort of bowl. The bowls are either brown rice or quinoa, grilled chicken and veggies. Sometimes I’ll get Flower Child (my fave!) and get the kid’s meal with grilled chicken, sweet potato and avocado. $7 and so good.

SNACKS

I try my hardest NOT to snack but when I'm working and sitting a lot I tend to snack a tiny bit. If I do snack though here are some of my favorites:

-almonds- usually a handful

-a juice from Suja- I love the Berry Buzz for energy, the Watermelon because it’s so delicious, and the Ginger Love.

-dried bananas from Trader Joes. only 3grams of sugar per serving, very good for dried fruit

-fruit in general- blueberries, raspberries, grapes, a banana, watermelon, melon, etc

-cheese stick

-hard boiled eggs

-gluten-free pretzels

-avocado with olive oil and Everything But The Bagel Seasoning from Trader Joes

-Pirate’s Booty

-Hippeas- I love the White Cheddar

-a few tortilla chips and guac

-green tea- lol yes this is a snack it curbs your hunger

-La Croix- the carbonation makes you full, and you know I’m obsessed

DINNER

Dinner varies on my mood, schedule, etc. If I’m going to dinner with a friend, it’s either sushi (literally any roll and I’m happy) or mexican (corn tortilla tacos or fajitas). If I’m cooking, it’s usually some sort of bowl, surprise surprise. I swear I could eat a bowl for every meal and be happy. My bowls at night differ depending on what I have in my fridge and if I had one for lunch. They are usually either brown rice, quinoa, or gluten-free pasta, grilled chicken, shrimp or ground turkey, veggies (red peppers, tomato, onion, zucchini, avocado), maybe cheese (feta usually) or some sort of sauce (salsa, pasta sauce, green goddess dressing from TJ, etc).

If I get Hello Fresh that week, it’s usually way more interesting and delicious- I highly recommend.

Sometimes I am lazy and eat a cauliflower crust pizza because they are easy and delicious.

I’ll try to have hot water and lemon with dinner (especially when I’m at a restaurant) or some sort of tea- ginger, mint, chamomile, etc.

DESSERT

Eat Enlightened for the win, always. I always either do a couple bites of the dairy-free ice cream (I love the Chocolate Almond Macaron and Ooey Gooey Cinnamon Bun) or the dairy-free ice cream bars (faves are Chunky Monkey and Mint Chip). They are SO delicious and easy. They’re made from almond milk and have under 100 calories and 5 grams of sugar soooo yes.

*Yes, I know I’m so boring and I agree. I wish I could eat whatever I wanted in life (like I used to) and be fine but that’s not the case, especially since I rarely workout and gluten really does make me not feel good. BUT, it is what it is and it’s working so I’m going to stick with it and be a bore in that way, but not in others ;)
